whenever I need real comfort food, few things will do.
But one of them is "coquillettes" with grated cheese and butter.
coquillettes are tiny pasta, like small curbed macaronis, and a traditional dish we had when we were kids, perhaps because they are so small, they are perfect for a child's mouthfull?
Cook them in salted boiling water for 9-10 minutes (al dente), drain them and quickly return them to the pan so some of the cooking juice stays with them. Drizzle them with a little olive oil, a good knob of butter then loads of grated cheese. Gruyere tastes like home for me as does gouda cheese but cheddar would equally do.
That's is, 15 minutes later I feel better already.
