As we normally had quite a lot to eat for Sunday lunch,
Sunday night meal was always on the light side...we never felt too hungry after finishing lunch around 4pm anyway!. Add to that the fact that in France, especially in a little village, there are no 24/7 Tesco (and I am not complaining
), all take makes that you cook with what you have on Sunday night.
Now, we always had (and still have I believe- from last time i checked my parents fridge this summer) a tin of sardines in the bottom drawer or in the cellar...not sure why, suppose it's one of those funny habits like me keeping...tinned peppered mackerels week in week out!. And we had chickens as well, so eggs were never a problem. this a really good tasty recipe if you are wondering to cook for dinner and you don't fancy cooking much.
You need:
(per person)
1/2 tin of sardines (preferably in olive oil)
2 slices of bread, slightly stale (if really fresh, just toast them for a minute of 2 on their own to dry them a bit)
2 egg whites (keep the yolks to make a lemon tart or a home made aioli)
1 tablespoon of tomato paste
salt and pepper to season
a little butter or spread
Pre heat your oven to 190 degres
Mix together the sardines (drained from the olive oil) and the tomato paste into a smooth paste
Taste for seasoning
Whisk the egg whites
Fold the eggs very gently into the sardines
Butter or spread the slices of bread
Spread the sardines mix on the bread
Bake in the oven for 10 to 15 minutes until set and golden
We had those just with a green leaves salad, with an olive oil, mustard, vinegar and crushed garlic dressing. Yummy...AND good for you (sardines are oily fishes full of omega 3, tomato is full of anti oxydants, garlic is well known as a prevention against sore throat and good for yoor heart) We didn't know all that mind....and I guess wouldn't have cared much at the time...but still, well done mum!

That looks very appetizing. I often have sardines with tomato paste on toast for similar reasons as a light snack on Sunday evenings. I find a small drop of tabasco does it no harm at all.
